6. 2 tablespoons vegetable oil for the crumb topping.

Start by preparing the cinnamon coffee cake batter. You will need one stick of room temperature butter or margarine melted in with the sugar. In a separate bowl, mix together your flour and the shredded wheat. Then slowly mix this into the butter and sugar solution to create your coffee cake batter. Sift the cinnamon and ground cloves onto a paper towel and combine this with 1/2 teaspoon of each granulated white and brown sugar in a shallow bowl.

However, it was such a success from the time we first tasted it to the moment the verdict of three different taste testers came back positive that it has become one of our favorite recipes.

Recipe Variations with Ground Cinnamon and Pecans

Cinnamon Coffee Cake is traditionally baked with flour, sugar and boiling water. The batter is baked in a pan lined with baking parchment. When it comes out of the oven, it becomes soaked and sticky. Just wait to cool down before you remove it from the parchment paper!

Prep Pour the Cream Cheese and mix in ingredients, then pour into pan

To make the cake, first start with the cream cheese. First beat together the cream of tartar and sugar until it starts to turn light in color. Now add in six oz of softened butter in small chunks and with an electric mixer, mix these together for about a minute. Add the rest of three cups of powdered sugar incrementally into this mixture as well. Now comes another key ingredient; a pinch of salt which is used to keep the cookies soft and spongy. One cup at a time, adding half ounce increments each time, mix in two tablespoons of flour into the creamed mixture before continuing to cream until smooth. Gradually add one egg yolk at a time making sure to incorporate each into the mixture properly before adding more ingredients otherwise flour will form lumps that won't come out if not mixed properly. Now shift your attention back to the sugar/butter mixture which should be just starting to turn light and fluffy so you can whip up your egg whites now before straightening them out with a little cornstarch (removes any liquid while stabilizing its volume). Whip these whites into submission but make sure not get too carried away or else they'll turn into butter rather than meringue (which has less air bubbles

After the many years it took for this unbaked recipe to finally come together, and the multiple iterations for a perfect fudgy brown bar layer in between, I cannot tell you how much I love this recipe. Because it's so delicious and easy, anyone can follow it exactly. It makes the best day ever when friends come to visit! I recently made this recipe for a family birthday party and the results were fantastic! I used the Nestle Tollhouse recipe (this is my favorite) and added toffee bits to boost the texture contrast.
